Title: Chicken Soup with Potato Dumplings

    1/4 c  Onion; chopped
      1 ea Garlic; crushed clove
      1 tb Vegetable oil
      6 c  Chicken broth
      2 c  Chicken; cut up, cooked
      1 c  Celery; sliced
      1 c  Carrots; sliced
    1/4 ts Sage; dried, crushed leaves

Bisquick Potato Dumplings:
  1 1/2 c  Bisquick
      1 c  Mashed potatoes; cold
      1 tb Green onion; chopped w/ top
    1/8 ts Pepper
    1/4 c  Milk

Cook onion and garlic in oil in 4 qt. Dutch oven, stirring frequently, until golden brown. Add broth, chicken, celery, carrots, and sage.

Heat to boiling.

Potato Dumplings:
Mix the Bisquick, mashed potatoes, green onion, pepper, and milk until a soft dough forms.

Beat vigorously 30 seconds. Knead about 2 minutes or until smooth, adding more baking mix if necessary.

Roll dough into 18 balls, about 1 1/2 inches in diameter.

Drop the dumplings into the boiling soup.
Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.

Title: Speedy Chicken Casserole

 14 1/2 oz Can stewed tomatoes
      2 cn Cream of celery soup
     16 oz Can French cut green beans;
      3 c  Chicken; cooked, cut-up
  1 1/2 ts Italian seasoning
      2 c  Bisquick
  1 1/2 c  Milk
    1/2 c  Cheddar cheese; shred

Heat oven to 450 degrees F.

Mix tomatoes, soup, beans, chicken and 1 tsp. Italian seasoning in ungreased 13x9x2 pan.

Mix baking mix and milk. Pour evenly over chicken mixture. Sprinkle with cheese and 1/2 ts Italian seasoning.

Bake 25 to 27 minutes or until crust is light golden brown and cheese is melted.

Title: Hamburger - Onion Pie

      1 c  Bisquick
    1/3 c  Light cream
      1 lb Hamburger
      2 ea Med. onions
      1 ts Salt
    1/4 ts Pepper
    1/2 ts Flavor extender
      2 tb Bisquick
      2 ea Eggs
      1 c  Cottage cheese

Heat oven to 375 F.

Mix bisquick with cream using your hands, knead gently 10 times.

Roll dough to fit 9" pie plate.

Saute beef and onion in frypan, add next four ingredients mix well and put in pie plate. Beat eggs slightly and blend in cottage cheese.

Pour over meat, sprinkle with paprika and bake 30 minutes.

Title: Leftover Turkey and Stuffing Pie

      2 c  Turkey; cooked;diced
    1/2 ts Seasoned salt
      1 c  Prepared turkey stuffing
    1/4 c  Green onions; w/tops,sliced
    1/2 c  Green peas; cooked
      1 c  Milk
      2    Eggs
    1/2 c  Bisquick

Heat oven to 400 degrees. Grease a 9" pie plate.

Arrange turkey in plate; sprinkle  with seasoned salt.

Separate stuffing into small pieces; arrange on turkey.

Top with green onions and peas.

Beat remaining ingredients until smooth, 15 seconds in  blender on high. Pour into pie plate.

Bake until knife inserted in center comes  out clean, about 30 to 35 minutes; cool 5 minutes.

Serve with hot turkey gravy.

Makes 6 servings.

Title: Easy Fruit Cobbler

      1 cn 21 oz fruit pie filling, any flavor
  1 1/4 c  Bisquick
      1 tb Sugar
    1/4 c  Milk
    1/4 c  Sour cream

Heat oven to 425F. Grease 1 1/2 qt casserole.

Heat pie filling to boiling. Pour into casserole.

Mix remaining ingredients until dough forms.

Drop by 6 spoonsful onto hot pie filling. Sprinkle with sugar (or a mixture of sugar and cinnamon).

Bake about 20 minutes or until biscuits are golden brown.

Title: Halibut Broccoli Pie

      3 c  Grated sharp cheddar cheese, divided
  1 1/2 c  Flaked halibut
      1 c  Finely chopped onion
      1 pk Frozen chopped broccoli, thawed and drained
  1 1/3 c  Milk
       3    Eggs
    3/4 c  Bisquick baking mix
    1/2 ts Lemon pepper
    1/4 ts Minced garlic
    1/8 ts Dried thyme leaves

Mix 2 cups cheese, halibut, onion and broccoli together and place in a 10"  greased pie plate.

Beat milk, eggs, bisquick, lemon pepper, garlic and  thyme. Pour over halibut-broccoli mixture.

Bake 400 degrees F. for 25-35 minutes or until knife inserted in center comes out clean.

Top with  remaining cup of cheese and bake 1-2 minutes longer; just till the cheese is melted.

Cool 5 minutes and cut into wedges. Garnish with tomato and parsley.

Title: Bisquick Apricot-Glazed Pound Cake

      3 c  Bisquick
  1 1/2 c  Sugar
    1/2 c  Flour
    3/4 c  Margarine or butter; soft
      6    Eggs
      8 oz Cream cheese; softened
      1 ts Vanilla
    1/8 ts Salt
    1/2 c  Sugar
    1/2 c  Water
    1/4 c  Orange-flavored liqueur
       1 c  Apricot preserves
    1/4 c  Sugar

Heat oven to 350 degrees F.

Grease a 10"x4" tube pan.

Beat bisquick, sugar, flour, margarine, eggs, cream cheese, vanilla, and salt in large bowl on low speed, scraping bowl frequently, for about 30 seconds.

Beat on  medium speed scraping bowl occasionally 4 minutes.

Pour batter into pan.

Bake until wooden pick inserted in center comes out clean, 55-60 minutes.

Cool 10 minutes; remove from pan.

Heat 1/2 cup sugar and the water to boiling; reduce heat. Simmer uncovered 2 minutes; cool to lukewarm. Stir in the liqueur. Slowly drizzle over cake.

Press the Apricot Preserves through a sieve.

Heat preserves and sugar to boiling, sitrring constantly; reduce heat.

Simmer uncovered until slightly thickened, 1 to 2 minutes. Cool slightly; spread over top, allowing some to drizzle down sides.

Title: Chocolate Peanut Butter Cupcakes

      2 c  Bisquick
    1/4 c  Sugar (granulated)
      1 ea Egg
    2/3 c  Water or milk
      2 tb Creamy Peanut Butter
      1 oz Semisweet Chocolate
  1 1/2 tb Margarine or butter
    1/2 c  Powdered sugar
    1/2 ts Vanilla
  1 1/2 tb Hot water
    2/3 c  Chopped peanuts

Heat oven to 400. Grease bottoms only of 12 muffin cups, or line with paper  baking cups.

Mix bisquick, sugar, egg, water or milk, and peanut  butter; beat vigorously for about 30 second. Fill muffin cups about 2/3 full.

Bake unitl golden brown, about 15 minutes. Cool.

Heat chocolate and margarine over low heat until melted. Stir in powdered  sugar, vanilla and hot water.

Spread about 1 teaspoon chocolate glaze over top of each muffin; dip into peanuts.

Title: Broccoli, Ham & Cheese Casserole

      2 c  Cooked, diced ham
      1 lg Bag frozen broccoli
      1 lb Shredded Cheddar cheese
      3    Eggs
      3 c  Milk
      4 c  Bisquick

Grease a 13 x 9 inch casserole.

Cook broccoli until fork tender and drain.

Layer the diced ham, the broccoli and then the Cheddar cheese.

Beat together eggs, milk and slowly add Bisquick until smooth (it will be slightly thick).

Pour evenly over ham, broccoli and cheese.

Bake 30 minutes at 350 degrees F.

With side of spoon, break open crust in center of casserole and continue cooking for 20 to 30 minutes or until center is set.
