Christmas Drinks

Christmas Mint Punch, Christmas Eggnog, Hot Buttered Rum, Hot Toddy, Christmas-time Fireside Punch, Kahlua Smoothie, Merry Berry Christmas Holiday Punch, Christmas Punch, Christmas Spiced Tea, and Crockpot Hot Cocoa for Christmas.

Christmas Mint Punch (contains alcohol)

   1 1/2 c Water
     10 oz Mint jelly
      3 c Pineapple juice; chilled
    1/2 c Lemon juice
1 1/2 c Vodka
     64 oz Lemon-lime carbonated drink; chilled
      1 qt Lime sherbet

In small saucepan, combine water and mint jelly; cook and stir until jelly melts. Cool.

In large punch bowl, combine jelly mix, juices and vodka.

Just before serving, add carbonated beverage and lime sherbet.

Christmas Eggnog (contains alcohol)
     12    Eggs, separated
      1 c Granulated sugar
      1 c Bourbon whiskey
      1 c Cognac
    1/2 ts Salt
      3 pt Heavy cream
           Grated Nutmeg

In an electric mixer, beat the egg yolks with the sugar until thick and lemon colored. Slowly add the bourbon and cognac, while beating at a slow speed. Chill several hours.

Add the salt to the egg whites and beat until almost stiff, or until the beaten whites form a peak that bends slightly. Whip the cream until stiff. Fold the whipped cream into the yolk mixture, then fold in the beaten egg whites.

Chill one hour.

When ready to serve, sprinkle the top with freshly grated nutmeg. Serve in punch cups with a spoon.

If desired, add one or two cups of milk to the yolk mixture for a thinner eggnog.

Hot Buttered Rum for Christmas (contains alcohol)
      2 tb Brown Sugar
      4 ts Butter Or Margarine,Softened
           Dash Ground Cinnamon
           Dash Ground Nutmeg
1 1/2 c Warm Water
    1/2 c Rum
           Lemon Slices (Opt.)

In a 2-cup measure stir together the brown sugar, butter or margarine, cinnamon, and nutmeg. Stir in the warm water.

Micro-cook, uncovered. on 100% power for 3 to 4 minutes or till steaming hot. Stir in the rum. Serve in mugs. Garnish with lemon slices, if desired.

Hot Toddy (contains alcohol)
Mix 1 teaspoon of fresh lemon juice with 1 tablespoon of honey. Add half a cup of boiling water. Stir until the honey is dissolved.

Add an ounce or two of Irish whisky (or Scotch, or Bourbon); stir with a vanilla bean.

Enjoy.

Christmas-time Fireside Punch (contains alcohol)
-      6 c Apple cider
     12 oz Can frozen lemonade concentrate
      1 c Granulated sugar
      1 c Peach schnapps
      1 c Rum

In a large pot, combine the apple cider, lemonade concentrate, and sugar, bring to a boil.

Remove from heat; stir in peach schnapps and rum. Serve hot.

Yield 12 - 6 oz. servings.

Kahlua Smoothie (contains alcohol)
      1 pt Vanilla ice cream
    1/3 c Creme de cacao
    1/3 c Kahlua

Combine ingredients in blender and process until smooth. Serve after dinner.

Merry Berry Christmas Holiday Punch (alcohol-free)
      6 c Orange juice
     20 oz Frozen strawberries in syrup
      2 c Cranberry juice cocktail
      3 c Ginger ale

Blend the orange juice, strawberries, and cranberry juice cocktail.

Add ginger ale immediately before serving.

Makes 18 servings.

Classic Cooked Chrismas Egg-Nog (alcohol-free)
      6    Eggs
    1/4 c Sugar
    1/4 ts Salt, optional
      1 qt Milk, divided
      1 ts Vanilla
           Garnishes or stir-ins

In large saucepan, beat together eggs, sugar and salt, if desired. Stir in 2 cups of the milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon and reaches 160 degrees F.

Remove from heat. Stir in remaining 2 cups milk and vanilla.

Cover and refrigerate until thoroughly chilled, several hours or overnight.

Just before serving, pour into bowl or pitcher.

Garnish or add stir-ins, if desired. Serve immediately.

Makes 1 1/2 quarts or 12 (1/2 cup) servings.

Garnishes and Stir-Ins (Choose 1 or several):

Chocolate curls
Cinnamon sticks
Extracts of flavorings
Fruit juice
Ground nutmeg
Maraschino cherries
Orange slices
Peppermint sticks
Candy canes
Sherbet
Ice cream
Whipped cream

Christmas Punch (alcohol-free)
      2 sm Bx Cherry Jello
      2 sm Cn Frozen Orange Juice
      1 sm Cn pink Lemonade
     32 oz Unsweetened Pineapple Juice

Mix all ingredients listed according to directions on package and then mix all together and refigerate for 24 hours.

This has been a favorite for years at Christmas time. My brother and I still ask for it when we are home for the holidays as do my own three childern. Absolutely delicious with all those home baked Christmas cookies.

Christmas Spiced Tea (alcohol-free)
      2 ts Cinnamon
      1 ts Ground cloves
      2 c Sugar
    1/2 c Instant tea w/twist of lemon
     18 oz Jar of Tang Juice Mix

Mix together all the ingredients and store in air-tight container.

Add 2 heaping teaspoons for each mug of boiling water for tea.

Crockpot Hot Cocoa for Christmas (alcohol-free)
1 1/2 c Sugar
1 1/4 c Cocoa powder
1 1/4 ts Salt
    3/4 c Hot water
      1 ga Milk
      1 ts Vanilla extract
    1/4 ts Cinnamon

In large saucepan, combine sugar, cocoa and salt. Add hot water slowly, mixing well. Cook over medium heat, stirring constantly, until mixture boils. Boil and stir 2 minutes.

Add milk; heat to serving temperature, stirring occasionally. DO NOT boil.

Remove from heat; add vanilla, and cinnamon; whip with a whisk.

Serve hot, with whipped cream or marshmallows if desired.

This recipe can be doubled and kept in crockpot for easier serving to large groups.
