Stir-Fry Easter Medley

    1/2 c  Water
      1 tb Cornstarch
      1 tb Soy sauce
      1 tb Dry sherry
    1/2 ts Sugar
    1/2 ts Ground ginger
      2 lg Eggs
      1 lb Ground beef
      3 x  Green onions, chopped
      1 pk Frozen cut green beans, thawed
           Hot cooked rice
      1 tb Vegetable oil

In small bowl, combine water, cornstarch, soy sauce, sherry, sugar and ginger. Set aside.

In a cup, beat 2 large eggs.

In skillet, heat oil and add the beaten eggs; let them spread to form a thin layer in the skillet.
Cook until bottom is set. Turn and cook until top is set.

Transfer the egg to a cutting board and cut into 1/4 inch wide strips.

In the same skillet, cook the ground beef until well browned. Add green onions. Cook for about a minute. Drain off fat. Add green beans and soy-sauce mixture to beef.

Cook, stirring constantly, until thickened. Stir in egg strips.

Serve over rice.

Serves 4.

Spaghetti Fritters (easter)

     1/2  lb         cooked spaghetti
   3 well beaten eggs
     1/4  C.   grated Italian cheese
   4      Stalks  fresh parsley -- chopped well
   1  Tbsp.  garlic salt
   1  Tsp.   oregano
   1  Tsp.  salt
   1   Dash  pepper oil

In a large bowl, mix together the spaghetti, eggs, cheese, parsley, garlic stalt, oregano, and salt.

Add oil to a skillet and heat till oil is hot. Drop mixture by forkfuls into the skillet.

Be sure to leave space between fritters. Brown lightly and turn. Serve hot.

Baked Rice Broccoli (easter)

    1/2 c  Butter
    1/2 c  Onion; chopped
    1/2 c  Celery; chopped
      2 c  Rice; cooked
      2 pk Frozen chopped broccoli; thawed*
      1 cn Cream of mushroom soup
      1 cn Water chestnuts; drain; chopped
      1 c  Velvetta cheese; cubed

*uncooked.
Preheat oven to 350 degrees F.
Melt butter in saucepan and saute the onion and celery.

In a big bowl mix together well the cooked rice, onion, celery, broccoli, cream of mushroom soup, water chestnuts, and velvetta cheese.

Place mixture in a casserole dish,.cover with foil and bake for about 30 minutes.

Easter Chimichangas

      3 c  Chopped chicken
    1/3 c  Green onion, chopped
      1 ts Ground cumin
    2/3 c  Picante sauce
    1 t  Oregano
    1/2 ts Salt
      8 ea Tortillas, flour
    1/4 c  Melted butter
    1/2 c  Shredded Jack cheese
    1/2 c  Shredded Cheddar cheese

Combine chicken, onion, cumin, picante sauce, oregano and salt in a saucepan. Simmer 5 minutes or until most of liquid has evaporated.

Brush one side of tortillas with butter. Spoon about 1/2 cup of mixture on unbuttered side of tortilla.

Top with cheese, fold over and bake at 325 degrees F. for about 15 minutes.

Strawberry Spinach Salad for Easter

      3 tb White wine vinegar
      3 tb Water
      1 tb Honey
      2 tb Extra-virgin olive oil
    1/8 ts Salt
    1/8 ts Pepper
      3 c  Strawberries, quartered
     10 oz Spinach Salad
      4 ts Pine nuts, roasted

Combine the vinegar, water, honey, oil, salt and pepper and stir well with a whisk.

Combine strawberries and spinach; add the vinegar mix and toss to coat.

Sprinkle with the pinenuts.

Salmon-Asparagus Manicotti (easter)

     16 oz Pkg Manicotti
      1    Salmon Steak -- about 1/2 lb
    1/2 lb Fresh Asparagus, uncooked
      1 lb Ricotta Cheese
           Salt And Pepper
      1 cn Cream Of Asparagus Soup
           Milk
           Parmesan Cheese

Cook the manicotti according to package directions, drain and cool. Set aside.

Poach the salmon steak, let cool, remove skin and bones, and crumble the flesh into medium-small pieces.

Trim the bottoms of the asparagus and chop the green parts into 1/2"-1" pieces.

Combine the cheese, salmon, asparagus, salt and pepper to taste in a large bowl.

Combine the Cream of Asparagus soup with 1 can of milk; add some of the soup to the cheese mixture.

The stuffing should be soft but not runny.

Stuff each tube of manicotti. Place them side-by-side in a shallow baking dish.

Pour the rest of the soup over the pan and sprinkle Parmesan cheese on top.

Bake at 350 degrees F. for 25 to 30 minutes.

Lazy Day Easter Lasagna

     12 oz Cottage cheese
      2 c  Mozzarella cheese, shredded
      2    Whole eggs
    1/3 c  Dried parsley
      1 ts Onion powder
     12 ts Dried basil
     18 ts Pepper
      1 qt Spaghetti sauce
    3/4 lb Ground beef -- cooked
      9    Pieces lasagna noodles
    1/4 c  Water
           Parmesan cheese

In a large bowl mix the cottage cheese, mozzarella cheese, eggs, parsley, onion powder, basil, and pepper until well blended; set aside.

In medium bowl, mix together the spaghetti sauce and ground beef.

In 12"x8"x2" baking dish, spread 3/4 cup meat sauce.

Layer 3 uncooked lasagna noodles on top.

Spread with half of the cheese mixture and 1 1/2 cups meat sauce.

Layer 3 more noodles on top of meat sauce.

Spread with remaining cheese mixture.

Top with remaining 3 noodles and remaining meat sauce.

Pour water around edges of casserole.

Cover tightly with foil and bake at 375 degrees F. for about 45 minutes.

Uncover and bake for 15 to 20 minutes more.

Let stand 10 minutes before serving.

Serve with parmesan cheese.

Easter Greek Lamb

        5 lb leg of lamb -- boneless
        1 c  olive oil
      1/2 c  red wine vinegar
        2 TB garlic -- minced
      1/2 c  parsley -- chopped
      1/2 c  dill -- chopped
        4 TB oregano
  :          black pepper

Preheat oven to 425 degrees F.

Whisk together the oil, vinegar, garlic, parsley, dill, and oregano.

Butterfly the lamb and pepper generously on both sides. Cut some slits in the meat. Marinate the lamb for 2 to 24 hours.

Drain marinade from lamb and put lamb in in shallow roasting pan for about 45 minutes. You want an internal temperature of 135 degrees F.

Let lamb rest before serving..

Easter Ham with Peachy Cinnamon Glaze

      1    16 - 18 lb fully cooked ham
      2 c  Chicken broth
           Peachy Cinnamon Glaze*
      1 c  Sugar
    3/4 c  Cider vinegar
    3/4 c  Golden raisins
     12    Whole cloves
      1    2-inch cinnamon stick
      1    20 oz bag frozen unsweetened peaches

*Peachy Cinnamon Glaze (make a day or two ahead):
Combine sugar, vinegar, raisins, cloves, and cinnamon in a heavy saucepan and cook over low heat. Increase heat. Cover pan and simmer for 8 to 10 minutes.

Add peaches and simmer, uncovered, until glaze is reduced to 1 1/2 cups; stir occasionally. Cool then refrigerate; bring to room temperature before using.

For the ham:
Cut away rind and all but 1/4-inch layer of fat from upper surface of the ham. Score 1/4-inch-deep diamond pattern in upper surface.

Place ham in shallow baking pan and bring to room temperature before baking.

Preheat oven to 325 degrees.

Add broth to pan and bake for about 2 hours, basting every 15 minutes.

Spoon off pan drippings. Spread glaze over top of ham.

Bake until glaze is light brown, about 45 minutes.

Let rest 20 minutes before carving.

Serves 10.
