Removing the Bitterness from Cucumbers

Using a sharp nonserated knife cut the tip of the cucumber off. Holding the cuke in one hand and the tip in the other rub the two sides of the slice together. This will act similar to a pipette and draw the bitterness out. (The bitterness is mainly located in the surface of the cuke just in and under the skin). The bitterness will be a white foam that looks like poorly whipped cream that collects on the outside edges of the cucumber's cut end. Turn cuke around and repeat on the other end. Peel.
