Recipes for Halloween Cakes:

 

Goopy Halloween Spider's Web Cake

White Cake*
1 small box green gelatin
Black Frosting:
Blue food coloring
Chocolate frosting
Decorations:
Black licorice
2 large green gum balls
White Frosting

*Enough to fit in two 9" round cake pans.

Prepare cake and gelatin according to package directions.

Cut a smaller circle out of one cake and use it for the spider's head. Fill the hole left over with gelatin. Place the other layer on top and trim to shape.

To prepare Black Frosting:
In a mixing bowl, add blue food coloring to chocolate frosting until black in color.

Frost cake with the black frosting. Pipe a spider web on the body of the spider using white frosting. Cut the black licorice to the appropriate size and use as the spider's 8 legs; use the gum balls as the eyes.

When the cake is cut, it spurts ucky green goop.

Jack-o-Lantern Frosting

1 Egg white
3/4 c Sugar
1/4 ts Cream of Tartar
1/4 c Orange Juice
1/2 ts Vanilla
Your favorite frosting recipe
Yellow and red food coloring

Place the egg white, sugar, cream of tartar, orange juice, vanilla, and frosting into the top of double boiler. Using an electric mixer, beat over simmering water for about 10 minutes or until mixture stands in peaks.

Tint the jack-o-lantern frosting orange by using several drops of yellow and red food coloring.

Hallowe'en desserts

 

 

Oozy Orange Halloween Cupcakes

Filling:
8 oz Cream cheese; softened
1 Egg
1/3 c Sugar
Yellow and red food coloring
6 oz Chocolate chips
Cupcakes:
3 c Flour
2 c Sugar
1/2 c Cocoa
2 ts Baking soda
1/2 ts Salt
2 c Water
1/2 c Plus 2 tablespoons vegetable oil
2 tb Cider vinegar
2 ts Vanilla
Frosting:
White frosting
Yellow & Red food coloring

Preheat oven to 350 degrees F.

Line cupcake baking pans with paper cupcake liners or spray with vegetable spray.

In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar. Blend in 2 drops yellow food coloring and 1 drop red food coloring, adding more coloring if necessary to reach desired shade.

Use mixing spoon to stir in chocolate chips; set filling aside.

In large mixing bowl, combine flour, sugar, cocoa, baking soda and salt; set aside.

In a second small mixing bowl, combine water, vegetable oil, vinegar and vanilla. Add contents of small mixing bowl to large mixing bowl and stir with mixing spoon to combine.

Using a tablespoon, fill cupcake liners half full with cupcake batter, then place 1 teaspoon filling at center of each. As cupcake bakes, the batter will rise to surround the filling.

Place pans in oven; bake approximately 25 minutes or until toothpick inserted in centre of one of the cupcakes comes out clean.

For the Frosting:
Make your favorite frosting and add a few drops of yellow and red food coloring.

This cupcake has a double frosting whammy: you've got the stuff on the top of the cupcakes and then you've got the stuff that oozes out of the middle (if you don't want it quite so sweet, just leave off the frosting on the top; maybe place a gummy worm on the top of each cupcake instead).

Recipes for Halloween Candies:

 

Halloween Goblin Balls

8 c Popped corn
1 c Granulated sugar
1/2 c Corn syrup
1/3 c Water
1 tb Butter
1/2 ts Salt
1 ts Vanilla
1 c Orange and black jujubes, chopped

Place the popped corn in a bowl and set aside.

In small saucepan over medium heat, bring sugar, corn syrup, water, butter and salt to boil; cook, stirring, until sugar is totally dissolved.

Cook, without stirring, for 10 minutes or until at hard-ball stage (254 degrees F. on a candy thermometer), or until 1/2 ts syrup dropped into cold water forms rigid but still slightly pliable ball. Remove from heat and stir in the vanilla.

Pour mixture over the popped corn; using a well-greased mixing spoon, mix until popcorn is well coated.

Stir in the candy.

Wearing rubber gloves, form into 2-inch balls; let cool on baking sheet.

Chocolate-Covered Bugs

Red-licorice twizzlers
24 ea caramels
6 oz Chocolate chips
Decorations:
Colored sprinkles
Small cinnamon candies
Sliced almonds

Line a baking sheet with waxed paper.

Cut licorice into tiny pieces.

Flatten each caramel into a small oval. Press pieces of licorice onto the edges of 12 out of the 24 flattened caramels; this is for the legs (use as many legs as you want for your bug).

Top each caramel with a second caramel and press edges to seal.

Put on prepared baking sheet.

Place chocolate in a microwave-safe bowl. Microwave on high for 1 minute. Stir and then microwave on high another minute longer.

Remove from oven and stir until melted. Spoon melted chocolate over each candy. Decorate with nuts and use the cinnamon candies for the eyes.

Ghosts on Broomsticks

1 lb White chocolate chips
1 rope black licorice
12 Wooden sticks

Place the white chocolate chips in a smaller pot and set it over a larger pot of simmering water. Cook on low heat, stirring constantly until the chocolate is fully melted. Remove from the heat.

Cover 2 cookie sheets with waxed paper. Arrange the wooden sticks on the waxed paper, 6 to a sheet.

Spoon ghost-shaped blobs of chocolate onto the paper, partially covering each stick. Press 2 licorice pieces into each ghost for the eyes.

Freeze ghosts for 15 minutes, or until hard.

Cat Poop Cookies

Chocolate Ingredients:
1/2 c Honey
2/3 c Margarine
1 Egg
1 ts Vanilla extract
2 c Whole wheat flour
1/3 c Cocoa powder
Grape-nuts cereal
Gingerbread Ingredients:
1/4 c Honey
1/4 c Molasses
2/3 c Margarine
1 Egg
Ginger, cinnamon, cloves to taste
Grape-nuts(tm) cereal
Mix-Ins:
Coconut; (tapeworms)
Chocolate chips
Butterscotch chips
Peanut butter chips
Ramen noodles, cooked (roundworms)
Corn
Peanuts
Topping:
Melted Chocolate

For Chocolate Ingredients:
Microwave the honey for about a minute or until it bubbles; add the margarine, egg vanilla extract, whole wheat flour, cocoa powder and Grape Nuts cereal; mix well.

For Gingerbread Ingredients:
Microwave the honey for about a minute or until it bubbles; add the molasses, margarine, egg, ginger, cinnamon, cloves, and Grape-nuts cereal.

Add the mix-ins as desired

Chill the two doughs for 1 hour in the freezer or several hours in the fridge.

Roll dough logs of random length and the diameter of cat poops and roll the logs in grapenuts.

Bake at 350 degrees F. about 10 to 15 minutes or until done.

Serve in a NEW disposable cat litter box on a bed of grapenuts, with a NEW cat litter scoop. For the final touch, melt the chocolate and drizzle it over top and over the scoop.

Halloween Party Pops

1 pk Refrigerated sliceable cookie dough
20 Wooden sticks
Your Favorite Frosting

Cut cookie dough into aobut twenty 1/2 inch slices, rolling each slice into a ball.

Arrange part of the balls in a circle on ungreased baking sheets, 3 inches apart and 2 inches from edges.

Securely insert a wooden stick into each ball with end pointing toward center of cookie sheet.

Bake in 350 degrees F. oven for 10 to 14 minutes or until golden brown. Cool 2 minutes; remove from baking sheet. Cool completely on wire racks.

Frost or decorate as desired with ready to spread frosting (or your favorite homemade recipe).

Decorate the cookies to make pumpkin faces, spider webs, black cat faces, etc. Use assorted seasonal candy for eyes, mouth, whiskers, etc.

Slime Dessert

Cherry flavored gelatin
Lime flavored gelatin
Cool Whip Lite
M&Ms plain chocolate candy

Make equal quantities of cherry and lime gelatin.

When set, mash each color up separately. Place alternate layers of cherry and lime gelatin into a large glass bowl.

Top with "eyeballs" of whipped cream blobs and use the M&M for the eyeballs (or use marashino cherries for the eyeballs).

Ghosts in the Graveyard

1 pk Oreo cookies
2 pk Chocolate INSTANT pudding
3 cups Cool whip
4 oz Rectangular white cookies
Topping:
Cool Whip
Licorice
Candied corn

Place cookies in zip-lock bag and crush using a rolling pin.

Make pudding as directed and let stand for 5 minutes.

Stir in the cool whip, and 1/2 the cookies.

Spoon mixture into a 13"x9" baking dish. Sprinkle with the remaining cookies. Refrigerate 1 hour.

Decorate using rectangular cookies as tombstones, etc.

Use cool whip to make ghost-shaped blobs on the top, create swirls of *ghosts* on top, use pieces of black licorice for the eyes. Place the candied corn around the top.

Eyeball Potion

8 oz Frozen whipped topping; thawed
10 Blueberries
1 1/2 c Boiling water
1 lg Pkg red colored gelatin
1 c Cold water
Ice cubes

Using a small ice-cream scoop, place 2 scoops whipped topping into each of 10 dessert dishes for the "eyeballs." Place a blueberry on top of each scoop for the "pupil."

Freeze 30 minutes, or until firm.

Meanwhile, stir boiling water into gelatin in large bowl at least two minutes until completely dissolved. Mix cold water and ice cubes to make 2 1/2 cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice.

Pour about 1/2 cup gelatin around the two "eyeballs" in each dish, leaving the top of the "eyeballs" exposed. Refrigerate 1-1/2 hours, or until firm.

Halloween Midnight Madness

8 oz cream cheese, softened
1/2 c Mayonnaise
1/2 c Sugar
2 Eggs
1 pk Semi-sweet chocolate chips, melted
1 ts Vanilla
1 Chocolate pie crust

Preheat oven to 350 degrees F.
In a large bowl with mixer at medium speed beat cream cheese and mayonnaise until smooth; gradually beat in sugar.

Beat in eggs, one at a time, beat in chocolate and vanilla until smooth.

Pour into pie crust, place on cookie sheet.

Bake for 30 to 35 minutes or until set.

Chill 4 hours before serving.

Jack-O'-Lantern Pie

1 c Boiling water
1 pk Jell-O orange flavor gelatin - 4 serving size
1 pt Vanilla ice cream; softened - (2 cups)
1 Prepared chocolate flavor crumb crust (6 oz)
Thawed Cool Whip
Candy Corn
Black licorice, cut into 1" pieces

Stir boiling water into gelatin in medium bowl 2 minutes or until completely dissolved. Spoon in ice cream, stirring until melted and smooth. Refrigerate 10 minutes or until slightly thickened (consistency of unbeaten egg whites). Spoon into crust.

Refrigerate 3 hours or until firm. Just before serving, make jack-o-lantern face on pie with whipped topping, candy corn and licorice. Store leftover pie in refrigerator.

Low-fat Pumpkin Pie with Ginger Cookie Crust

1 c Canned pumpkin
3/4 c Evaporated skim milk
1/2 c Applesauce, natural, unsweetened
1/4 c Sugar
1/4 c Low-fat Maple syrup
3 Egg whites
2 ts Cornstarch
1 1/2 ts Pumpkin pie spices
1 1/2 c Gingersnap cookie crumbs

Preheat oven to 400 degrees F.
Beat together the pumpkin, milk, applesauce, sugar, maple syrup, egg whites, cornstarch, and pumpkin pie spices in a large bowl.

Coat a 9" pie plate with vegetable spray; line with gingersnap crumbs and pour mixture into the crust.

Bake for 15 minutes; then reduce heat to 350 degrees and bake an additional 20 minutes or until a toothpick inserted in the centre comes out clean.

Sprinkle with additional cookie crumbs, and serve with reduced fat whipped cream of fat-free frozen yogurt.
