Low-Fat Recipes

Some ideas for cutting back on the amount of fat including recipes for low-fat grape nut bars, angel drops, big cookie, low-fat peanut butter bananas, and lots more.

 

Title: Low-Fat Grape Nut Bars

      3 c  Grape Nuts cereal
      1 c  Non-fat milk
      1 c  Unsweetened applesauce
      1 c  Raisins
      2 t  Vanilla extract

Preheat oven to 350 degrees.

Mix all ingredients together. Pour into a non-stick 9" square baking dish.

Bake for 35 mins. or until firm. Cool and cut into 12 squares.

 

 

Title: Angel Drops

      2    Egg whites
    1/4 ts Salt
      1 ts Vanilla
    3/4 c  Sugar
    1/2 c  Dates, chopped
      1 c  Nuts, chopped
      1 tb Flour

Preheat oven to 350 degrees F.

Beat egg whites until soft peaks form. Add salt and vanilla. Gradually add sugar, beating until stiff peaks form. Sprinkle dates and nuts with flour and fold into egg whites.

Drop by teaspoon on greased cookie sheet. Bake for 10 to 12 minutes.

 

 

Try this topping the next time you have a bowl of hot popcorn: Spray the popcorn with a vegetable spray or melt a small amount of butter and pour over the popcorn (use a mister to lightly spray the popcorn with water to make it a little bit moist). Sprinkle on desired amounts of garlic powder, chili powder, and grated parmesan cheese.

 

Title: Big Cookie

  1 1/2 oz Oatmeal; dry
    1/3 c  Nonfat dry milk
      1 ts Baking powder
      1 ts Cinnamon
      2 tb Raisins
      2 tb Low-fat Peanut butter
      1 ts Vanilla
    1/2    Very ripe banana; (mashed)
      2 tb Water; (maybe 3 T)

Preheat oven to 350 degrees F.

Combine the oatmeal, dry milk, baking powder, cinnamon, raisins, peanut butter, vannila, banana, and water; mix well.

Divide into 2 cookies on a sprayed baking sheet.

Bake for 5-8 minutes (do not over-bake).

 

 

Title: Low-Fat Cheesers

      4 ea tortillas
    1/2 c  lean meat, chopped (optional)*
      2 ea green peppers, diced
      1 ea zucchini, diced
      1 ea onion, diced
    1/2 lb grated ricotta cheese

*Cooked turkey or chicken or lean ground beef.
Lay tortillas flat on cookie sheets.

Preheat oven to 350 degrees F.

Layer the meat (if using), peppers, zucchini, and onion on each tortilla, beginning with meat, if any.  Top with cheese.

Put cookie sheets into oven and bake for 10 minutes or until cheese is bubbling.

Remove from oven and serve immediately.

This dish is well-suited to substituting any left over meat and vegetables you may have for those listed above.

 

 

Title: Low-Fat Peanut Butter Bananas

      6 ea Firm bananas
     12 ea Wooden sticks
      6 T  Low-fat Peanut butter
    1/2 c  Skim milk
      1 x  Crunchy cereal

Cut bananas in half and place a wooden stick in each banana

Mix peanut butter and milk until mixutre is smooth.

Roll the bananas first in the milk mixture and then in the crunchy mixture. Cover with plastic wrap and freeze until firm.

 

 

Title: low-fat Cinnamon French Toast

      1 x  Lge Egg, beaten
    1/4 c  Skim Milk
      1 t  Vanilla extract
    1/4 t  Ground Cinnamon
      3 x  Slices Bread

Beat the egg, milk, vanilla, and cinnamon together in a flat dish such as a soup plate or pie pan, that will accommodate the bread and make it easy to remove the bread once it's wet.

Add 1 slice of bread at a time, turning so that both sides are coated and absorb some of the liquid.

Remove the bread, slice by slice, to a plate.

Heat butter or oil on a large griddle or skillet, reduce the heat, and brown the bread briefly on each side. Serve with syrup, honey, cooked or raw fruit, or plain.

 

 

Title: Low-fat Breakfast Bars

    3/4 c  quick-cooking oatmeal
    1/4 c  applesauce
      4 ea canned apricots*
    1/4 c  apricot juice*
      1 c  raisins
    1/2 c  powdered milk
      2 T  cocoa
      2 T  brown sugar
      1 T  sesame seeds
    3/4 t  coconut extract
    1/4 t  salt

*Chop apricots; reserve the juice.
Preheat over to 350 degrees F.

In mixing bowl, mix together the oatmeal, applesauce, apricots, raisins, powdered milk, cocoa, brown sugar, sesame seeds, and coconut extract. Add the apricot juice and blend well.

Spray an 8x8 inch pan using vegetable spray. Spread the mixture in the pan.

Bake for 15 minutes or until mixture is not sticky to touch.

Cut into strips while warm.

 

 

Title: Fruit 'n Cream Pops

      1 c  Fruit and its juice
      1 c  Skim milk
    1/2 c  Instant non-fat dry milk
      1 t  Honey
    1/2 t  Vanilla
     10 ea Popsicle sticks

Mix together fruit and milks. Whip in honey and vanilla until fruit mixture is well blended.

Freeze in a freezer container or ice cube tray for 40 minutes.

Spoon the mixture into the blender and blend for 30 seconds. Pour mixture into popsicle molds or paper cups, insert popsicle sticks and freeze until firm.
