Mother's Day Barbecued Ribs
 
      4 lb Pork ribs, cut in pieces
      1 ea Lemon
      1 ea Large onion
      1 c  Catsup
    1/3 c  Worcestershire sauce
      1 ts Chili powder
      1 ts Garlic powder
      1 ts Salt
      2 x  Dashes Tabasco sauce
      2 c  Water
 
Place ribs in shallow roasting pan, meaty side up.  On each piece, place a slice of unpeeled lemon, a thin slice of onion.

Bake at 450 F degrees for 30 minutes.

Combine catsup, worcestershire sauce, chili powder, garlic powder, salt, tabasco sauce, and water; bring to a boil and pour over ribs.

Continue baking at 350 F degrees, about 2 hours, basting ribs with the sauce every 15 minutes.

Spanish Rice
 
      3 tb Shortening
  1 1/2 c  Rice
    1/2 c  Onion, sliced
    1/2 c  Bell pepper,sliced
      1 ea 14 oz can whole tomatoes
      1 ea Medium clove garlic, minced
      1 ts Black pepper
      2 ts Salt
      3 c  Water
 
Melt shortening in large skillet. Add rice and brown.

When rice is a golden brown, reduce heat and add onion, bell pepper, tomatoes, garlic and pepper.

Mix well and add 1 1/2 cups warm water or enough to just cover the rice. Add salt. Cover and let simmer until almost dry. Add remaining water, cold, a little at a time, cooking over low heat until fluffy.

Microwave Barbecued Chicken
 
  2 1/2 lb Cut Up Broiler Fryer
      1 c  Catsup
    1/4 c  Worcestershire Sauce
    1/4 c  Vinegar
    1/4 c  Packed Brown Sugar
      1 ea Med. Onion, Chopped
      2 tb Cornstarch
      1 tb Lemon Juice
      1 ts Salt
      1 ts Celery Seed
    1/4 ts Liquid Smoke
           Dash of Tabasco Sauce
 
Cut chicken into pieces; cut each breast half into halves.  Arrange chicken skin sides up and thickest parts to outside in oblong baking dish, 12 x 7 1/2 x 2-inches.

Mix the catsup, worcestershire sauce, vinegar, brown sugar, onion, cornstarch, lemon juice, salt, celery seed, liquid smoke, and tabasco sauce in 4-cup glass measure.

Microwave uncovered on high (100%) 3 minutes; stir.

Microwave until mixture boils and thickens, 2 to 3 minutes.

Pour sauce over chicken. Cover loosely and microwave on high (100%) 10 minutes.

Rearrange chicken and baste with sauce.  Cover loosely and microwave until chicken is done, 10 to 15 minutes, basting with sauce every 5 minutes.

Sauted Salmon Steaks
 
      4 ea Salmon Steaks
      1 tb Butter
      1 ts Soy sauce
    1/4 ts Garlic powder
      4 ea Lemon slices
 
In a large non-stick skillet, melt butter; add soy sauce and garlic powder.

Add salmon and cook for 4-5 minutes.  Turn and continue cooking 4-5 minutes more or until fish flakes easily.

Garnish with lemon slices.

Easy Mother's Day Spaghetti
 
      1 lb Ground beef
      1 ea Minced garlic
      1 tb Whole basil
      1 lb Can of tomatoes
      2 ea 6oz. cans tomato paste
      1 ea Small mushrooms
     12 oz Noodle
      1 ts Salt
      1 c  Water
           Basil, oregano, etc. to taste
 
Brown ground beef and drain.

Add garlic, basil, tomatoes, tomato paste, and mushrooms.

Simmer, covered 14-20 minutes; stir often.

Cook noodles in salted water.

Grilled Shrimp
 
      2 lb Large shrimp
    1/4 c  Fresh parsley
      1 c  Olive oil
      1 tb Oregano
      4 tb Lemon juice
      1 tb Chopped garlic
     1 tb Tomato paste
      4    Drops Tabasco Sauce
           Salt and Pepper to taste
 
Combine the shrimp, parsley, oil, oregano, lemon juice, garlic, tomato paste, tabasco, salt, and pepper in a glass dish. Marinade 2 hours at room temperature.

Broil shrimp 3-4 inches from heat for 3 minutes. Turn and broil 3 minutes more.

Served over rice or noodles with green salad and garlic bread.

Easy Apples and Noodles
 
      2 c  Noodles, divided*
      2    Apples, peeled and sliced
      4 tb Brown Sugar, divided
      1 ds Cinnamon
      4 tb Butter, divided

*Cooked and drained.
Preheat oven to 350 deg F.

Place 1 cup of the noodles and apples in a buttered baking dish. Sprinkle with 2 tablespoons brown sugar and a dash of cinnamon. Dot with 2 tablespoons butter. Repeat.

Cover and bake 30 minutes.  Uncover toward the end of baking to give the top a nice crunchy texture.

Red Wine Steak
 
      1 ea Whole Sirloin Steak
      2 c  Red Wine
      2 ts Oregano
      1 tb Black Pepper
      1 ts Salt
      2 tb Chopped Parsley
      1 ts Chopped Garlic
      1 tb Cooking Oil
      2 c  Mushrooms, halved
    1/2 c  Chopped Onions
      1 tb Worcestershire Sauce
 
Cut sirloin steak into individual serving pieces.

Marinate steak in red wine, oregano, black pepper, salt, parsley, and garlic for eight hours.

When ready to prepare, saute mushrooms and onions in oil; set aside.

Brown steak in skillet. Add Worcestershire sauce, mushrooms and onions; simmer for 1/2 hour over
low heat.

Remove steak, mushrooms and onions to a large casserole and cover.

With remaining pan juices, prepare a gravy; pour over steak.

Beef Tacos
 
      1 lb Ground beef
      1 ea Chopped onion
      1 x  Salt to taste
      1 ea Clove garlic
      1 pk Taco shells
      1 c  Taco sauce
 
Saute the beef and onion until brown. Salt to taste. Add garlic.

Place a heaping tablespoon of meat mixture in each shell and stuff with lettuce, tomato and cheese. Serve with the taco sauce and top with sour cream or guacamole for an added treat.

Meatless Loaf
 
      1 c  Cooked brown rice
      1 ea Egg
      2 tb Chopped onions
      1 ts Salt
      2 c  Crushed peanuts
      2 c  Cottage cheese
      2 tb Olive oil
    1/2 ts Pepper
 
Combine the rice, egg, onions, salt, peanuts, cottage cheese, olive oil, and pepper.

Put in loaf pan and bake at 350 degrees for about 30 minutes.
