Popcorn Recipes

Caramel Popcorn, Golden Caramel Popcorn Patties, Fruit-Flavor Popcorn Balls, Cheddar Bacon Popcorn, Honey Popcorn Balls, and Garlick Popcorn Balls

 

Title: Caramel Popcorn

      6 c  Popcorn - popped
      2 tb Margarine
      2 tb Honey

Spread popcorn evenly in large, shallow baking pan.

In small saucepan, melt margarine and blend in honey. Pour over popcorn, stirring to coat all pieces.

Bake at 325 for 8 to 10 minutes, stirring often. Cool slightly in pan before removing. Store in airtight container.

 

 

Title: Golden Caramel Popcorn Patties

      2 c  Sugar
    1/2 c  Syrup; light
      1 c  Water; hot
    1/4 ts Salt
      1 t  vanilla
      1 t  lemon juice
      5 qt hot popcorn
      1 c  peanuts

Boil the sugar, syrup, water, and salt to soft ball stage.
Add the vanilla and lemon juice.

Mix the peanuts and the popcorn. Pour the syrup mixture over the popcorn. Mix well and spread in a pan. Cut into squares.

 

 

Title: Fruit-Flavor Popcorn Balls

      1 c  Light corn syrup
    1/2 c  Sugar
      1 sm Jello; any flavor
    1/2 lb Salted peanuts; coarse chop
      9 c  Popped popcorn

Bring syrup and sugar to a boil. Remove from heat and add Jell-O, stirring until dissolved.

Add peanuts and pour over popcorn, mixing well.

Quickly form into 1 1/2" balls. Makes about 4 dozen.

 

 

Title: Cheddar Bacon Popcorn

      5 sl Bacon; cooked crisp and
           -crumbled
     10 c  Popped corn
    1/4 lb Sharp cheddar cheese; finely grated

Preheat oven to 250 degrees F.

In a large baking pan, combine bacon, popcorn, and cheese.

Bake for 3 to 5 minutes or until cheese is just melted.

Title: Honey Popcorn Balls

  1 1/2 qt Unbuttered popped corn, salted
    1/2 c  Brown sugar
    1/2 c  Granulated sugar
    1/4 c  Honey
    1/3 c  Water
      1 tb Butter

Put popped corn in oven to keep warm.

Combine sugars, honey, and water in a buttered 2-quart heavy- bottom saucepan. heat slowly, stirring until sugar is dissolved.

Cook to firm ball stage (248 deg.).

Add butter and stir only enough to mix. Slowly pour syrup over popcorn, tossing to mix. With buttered hands, shape into balls.

 

 

Title: Garlic Popcorn Balls

     50    Cloves fresh garlic (about 4 heads)
      2 ts Salt
      4 c  Shredded Cheddar cheese
           -(about 1 lb.)
      5 qt Popped corn (about 1/2 cup
           -unpopped)

Peel garlic and mince with salt to prevent sticking and to absorb garlic juices. Toss garlic with cheese.

In large glass or plastic bowl, make alternate layers of popped corn and garlic-cheese mixture, coating popcorn as evenly as possible, especially at edge of bowl.

Place in microwave oven and cook 1 minute. Shake bowl gently; turn 180 degrees and cook 1 more minute. Do not overcook.

Immediately turn out onto cookie sheet, and quickly shape into plum-size balls. Set balls on sheets of waxed paper.

Makes 4 dozen popcorn balls.
