Valentine's Day Brunch

      6    Eggs
     16 sl Bread
  1 1/2 c  Shredded cheddar cheese
     10 sl Ham
      3 c  Milk
    1/2 ts Dry mustard
    1/2 ts Salt
    1/2 c  Butter
      1 c  Cornflakes

Butter both sides of the 16 slices of bread. Place 8 slices in a 8 x 10 pan which is 2" deep.

Cover the bread with the sharp cheese and ham slices. Top this with the remaining 8 slices of bread.

Mix the eggs, milk, mustard, and salt together.

Pour over the casserole and refrigerate overnight.

The next morning, combine 1/2 cup butter and the cornflakes, and put on top of the casserole.

Bake for 1 hour at 350 degrees F.

Cinnamon-Apple Valentines Day Breakfast Popover

    1/2 c  All purpose flour
    1/2 c  Skim or 2% milk
      1 tb Melted butter
    1/8 ts Salt
      4    Egg whites
Apple-Cinnamon Topping:
  1 1/2 c  Chopped apples
    1/2 c  Apple jelly
      2 tb Water
    1/8 ts Cinnamon

Heat oven to 400 degrees F.

Spray 8-inch square baking dish with nonstick cooking spray.

In medium bowl, beat flour and milk with wire whisk until well blended. Add butter, salt and egg whites; beat well. Pour into spray-coated dish.

Bake for 25 to 30 minutes or until puffed and golden brown.

For the Apple-Cinnamon Topping:
Meanwhile, in small saucepan combine the apples, Apple Jelly, water, and cinnamon and heat over low heat until jelly is melted and mixture is hot, stirring frequently.

Immediately after removing popover from oven, cut into fourths and serve with hot topping.

Apple-Brie Cheese Omelet (Romantic Breakfasts for Valentine's Day)

      2    Apples; peeled, cored and thinly sliced
      8 tb Butter
      8    Eggs
      8 ts Cream
           Salt & pepper
      2 tb Butter
      8 tb Diced Brie cheese

Saute apple in butter.

Beat together eggs, cream, and salt & pepper until blended but not frothy.

Melt butter in omelette pan over high heat until foam begins to recede but before beginning to color.

Pour in egg mixture and prepare omelette, beating to lighten but still allowing it to settle on the bottom.

Fill with sauteed apples and diced Brie cheese cubes. Fold or roll and slide out of pan onto a heated plate.

Valentine's Day Breakfast Burritos

    1/2 lb Ground Beef
      1 sm Onion chopped
    1/2 sm Green bell pepper
    1/2 ts Salt
      1 ts Ground black pepper
    1/2 ts Ground cumin
      2 c  Potato Parboiled, diced
      4    Eggs
      9    Flour tortillas
    1/2 c  Shredded cheddar cheese

Brown the ground beef with the onions. Drain the fat, then add the spices and diced potatoes.

Whisk the eggs and milk slightly. Add to beef/potato mixture over a medium high high.

Mix together as in scrambled eggs.

Warm flour tortillas on a hot griddle.

Put egg/beef mixture on warmed tortilla and sprinkle with shredded cheddar cheese.

Fold the tortilla making a burrito.

Serve with salsa of your choice.

Cheesecake Pancakes with Strawberry-Lemon Syrup (Romantic Valentines Day Breakfasts

      2 c  Buttermilk pancake mix
  1 1/4 c  Water
      1 c  Small curd cottage cheese
      1 tb Sugar
      1 ts Vanilla extract
Strawberry-Lemon Syrup:
      1 c  Syrup
      1 c  sliced strawberries
    1/2 ts lemon rind

Preheat griddle.

Combine the pancake mix, water, cottage cheese, sugar, and vanilla extract in a medium bowl; stir well until blended.

Pour batter by 1/4 cupfuls ont hot, well-greased griddle.

Flip pancakes when tops are covered with bubbles.

For Strawberry-Lemon Syrup:
Combine the syrup, strawberries, and lemon rind in a small saucepan; heat through, stirring occasionaly.

Valentine's Day Ham Ring

     10    Eggs
      1 lb Ground, fully cooked ham
      1 lb Bulk pork sausage
  1 1/2 c  Bread crumbs
    1/2 c  Milk
      2 tb Dried parsley flakes
      1 tb Prepared horseradish

In a large bowl, lightly beat 2 eggs. Add the ham, sausage, bread crumbs, milk, parsley and horseradish; mix well.

Press into a greased 6-cup ring mold.

Bake at 350 degrees F. for 1 1/4 hours.

Towards the end of the baking time, prepare scrambled eggs with the remaining eggs, seasoning as desired.

Remove ring from oven and drain juices; unmold into a serving platter. Fill the center with scrambled eggs.

Serve immediately.

Bacon & Egg Valentine's Day Casserole

    1/4 c  Margarine, melted
      2 c  Onion/garlic croutons
      2 c  Milk
      1 tb Prepared mustard
      2 c  Unseasoned croutons
      2 c  Cheddar cheese, grated
      6    Eggs
     10    Slices bacon

Cook bacon crisply and crumble. Coat a 9x12x2 casserole dish with vegetable spray.

Place croutons in casserole and pour margarine over them. Sprinkle grated cheese over all.

Mix milk, eggs, and mustard and pour over cheese.

Sprinkle bacon crumbs over all.

Bake at 325 degrees F for 45 minutes.

Allow casserole to stand for 15 minutes.

Cinnamon Apple Nut Muffins

    3/4 c  Whole-wheat flour
      1 c  All-purpose flour
      2 ts Baking powder
    1/4 ts Salt
    1/2 c  Sugar, divided
      1 ts Ground cinnamon
      1 c  Low-fat 2% milk
      2 tb Melted margarine
      2    Egg whites, lightly beat
    3/4 c  Peeled, finely chopped apples
    1/4 c  Chopped walnuts
           Sugar for topping

Preheat oven to 400 degrees F.

In a small bowl, toss apples with 1/4 cup sugar and the cinnamon.

In a large bowl, combine remaining 1/4 cup sugar, whole wheat and all-purpose flour, baking powder and salt.

Mix together milk, margarine, and egg whites. Stir milk mixture into dry ingredients just until moistened. Add apples and nuts.

Fill lightly greased muffin cups three-quarters full; sprinkle each top lightly with sugar.

Bake for 20 to 25 minutes.

Valentines Day Coffeecake

    1/2 c  Butter
      1 c  Sugar
      2    Eggs, separated
    1/2 c  Milk
      1    Lemon; grated rind
      1    Orange; grated rind
  1 1/2 c  Flour
      1 ts Salt
      2 ts Baking powder

Cinnamon Filling:
    1/2 c  Brown sugar packed
      1 ts Cinnamon
      1 tb Butter; melted
      1 tb Flour
    1/2 c  Walnuts; chopped

Cream together the butter and sugar. Add the eggs yolks, milk, lemon and orange rinds and mix well.

Sift together the flour, salt, and baking soda and add to the creamed mixture.

Beat the 2 egg whites until stiff but not dry, fold into batter.

Pour little over half the batter in a well greased 9" pan and smooth evenly. Sprinkle cinnamon filling lightly over batter, then dribble remaining batter over filling.

Bake at 350 degrees F. for 40 to 45 minutes.

For Cinnamon Filling:
Mix together the brown sugar, cinnamon, melted butter, flour, and walnuts

Serve this wonderful coffee cake to your Valentine with a hot cup of coffee.

Valentines Crustless Breakfast Pizza

      1 lb Pork Sausage
      1 c  Frozen Hash Browns; thawed
      2    Red Bell Peppers; thinly sliced
      2    To 3 Roma tomatoes; thinly sliced
      1 c  Cheddar Cheese; shredded
      5 lg Eggs
    1/4 c  Milk
    1/8 ts Freshly Ground Black Pepper
           Herbs (your favorites)*
           Freshly grated Parmesan Cheese to taste
           Tomato slices for garnish

*Some suggestions are basil, oregano, rosemary, etc.
Heat oven to 375 degrees. Have ready a 10-inch pie plate.

Crumble sausage into a large skillet and cook over medium heat 5 to 7 minutes.

Remove from skillet with a slotted spoon, pressing out excess fat. Spoon into the pie plate.

Top with hash browns, bell pepper and tomato slices and top with Cheddar.

In a medium-size bowl, beat together eggs, milk, black pepper and herbs. Pour over cheese. Sprinkle with Parmesan.

Bake 30 to 35 minutes, until slightly puffed and a knife inserted in center comes out clean (if making ahead, let cool completely, then wrap and refrigerate.

To reheat, cover with foil and bake at 350 degrees for 20 to 30 minutes.

Garnish with tomato slices and Parmesan.
