MicrowaveValentine's Day Peanut Brittle

      1 c  Raw peanuts
      1 c  Sugar
    1/2 c  White corn syrup
    1/8 ts Salt
      1 ts Butter
      1 ts Vanilla
      1 ts Baking soda
 
Stir together peanuts, sugar, syrup, and salt. Cook 4 minutes on high. Stirring well, cook another 4 minutes. Add butter and vanilla to peanut mixture; stir well to blend. Cook for about 2 minutes (peanuts will be slightly browned and syrup hot).

Add baking soda and gently stir till foamy.

Pour onto aluminum foil. Let cool, break into pieces and store air tight container.

Valentine's Day Marshmallow Fudge

      1 c  Milk

      2    Square Unsweetened Chocolate*
      2 tb Margarine
  2 1/2 c  Sugar
    1/4 ts Salt
      2 tb Light Corn Syrup
      1 ts Vanilla
     12    Marshmallows
 
  *or 6 tablespoons of Cocoa.
Heat milk, chocolate and margarine together in a heavy saucepan over low heat until chocolate is melted. Add sugar, salt and corn syrup. Cook, stirring until boiling starts.

Cover and boil 3 minutes to wash down sugar crystals from pan sides. Uncover. Cook without stirring until thermometer reaches 232 degrees. Remove from heat and cool without stirring to lukewarm.

Add vanilla and beat until fudge thickens and loses it's gloss.

Cut each marshmallow into 8 pieces and stir into fudge. Turn into greased pan.

Cut into squares when firm.

Hot Cinnamon Candy (romantic candy recipes for Valentine's Day)

      Powdered Sugar (as much as is needed)
     3 1/2 c  Sugar
      1 c  corn Syrup
      1 c  Boiling Water
      1 ts Red Food Coloring
      1    T Cinnamon Oil

Sprinkle powdered sugar onto 2 cookie sheets, covering well to prevent candy from sticking to sheets.

Cook sugar, corn syrup, and water to 290ø F on a candy thermometer.

Add cinnamon oil and food color (be VERY careful of the fumes).

MIX WELL and pour evenly (and slowly) over sugared pans. Spread candy carefully.

WORK QUICKLY. Allow to cool. Sprinkle powdered sugar over top of candy.

Crack into pieces and enjoy.

Valentine's Day Fudge Nougouts

      2 c  Sugar
    1/2 c  Butter; or margarine
      1 c  Evaporated milk
      6 oz Chocolate chips,semisweet - 1 pk
    3/4 c  Flour
      1 c  Graham cracker crumbs
    3/4 c  Walnuts; chopped
      1 ts Vanilla

In a saucepan, heat together sugar, butter and milk; boil 10 minutes. Stir in chocolate chips, flour, crumbs, walnuts and vanilla. Blend thoroughly.

Spread in buttered 12x8 inch or 9x9 inch pan. Cool, cut into squares. Wrap individually in plastic wrap.

Microwave Valentine's Day Divinity

      3 c  Sugar
    1/2 c  Light corn syrup
    2/3 c  Water
    1/4 ts Salt
      1    Egg white
    1/4 ts Vanilla
      1 c  Chopped pecans
 
In a 3 quart glass bowl, microwave sugar, syrup and water on FULL power for 12-15 minutes or until mixture spins a fine thread.

In another bowl add salt to egg whites, beating constantly until whites are stiff and form peaks.

Slowly pour a thin stream of syrup mixture into egg whites, beating constantly until mixture loses shine and thickens.

Stir in vanilla and nuts. Immediately drop by teaspoonsful on waxed paper.

Valentine Honey Drops

      2 c  Strained honey
      1 tb Butter or butter substitute
      1 tb Lemon juice
    1/8 ts Baking soda
           Few grains salt

Heat honey to boiling. Add baking soda, butter, lemon juice, and salt. Boil to hard ball stage (265 - 270 F).

Pour into well-buttered pan. Cool.

Pull until white and porous. Cut in 1 inch pieces.

Maple Cream Balls (romantic recipes for Valentine's Day)

      2 c  Maple syrup
    1/8 ts Salt
      2 ts Butter
      1 ts Vanilla extract
    2/3 c  Chopped nuts

Boil syrup and salt to soft ball stage (234 - 238 F).

Remove from heat and cool to room temperature.

Add butter and vanilla extract. Beat until creamy. Add 1/2 of the nuts. Continue beating until mixture is sufficiently firm to mold into small balls.

Roll balls in remainder of nuts. Place on waxed paper to harden.

Giant Valentines Day Peanut Butter Cups

    1/2 c  Butter or margarine, softened
      2 c  Icing sugar
      1 c  Chunky peanut butter
    1/2 c  Pecans, ground
    1/2 ts Vanilla
     12 oz Semisweet chocolate chips
    1/4    Bar paraffin

In large mixing bowl, combine butter, icing sugar, peanut butter, pecans, and vanilla; mix well.

Melt chocolate chops and paraffin in top of a double boiler over low heat. Lightly grease four 4 1/2" or two 8" tart pans with removable bottoms. Spread a thin layer of melted chocolate on the bottom and sides of each pan. Refrigerate for 5 minutes or until chocolate is set.

Spread another thin layer of chocolate over the first layer; refrigerate to set.

Divide peanut mixture evenly between pans; level tops.

Spread a layer of chocolate over peanut layer in each pan, sealing edges.

Refrigerate until set.

To remove peanut butter cups from pans, remove sides of pans. Insert the edge of a sharp knife between the bottom of each pan and the chocolate.

Top off with a Hershey Kiss, red hots, or a storebought Valentine's Day candy (the one's with the messages on them: "I love you", "Be Mine", etc.).

Maple Pralines (romantic candy recipes for Valentine's Day)

      2 c  White granulated sugar
      1 c  Dark brown sugar
      3 tb White corn syrup
      1 c  Whipping cream
           Pn salt
      2 ts Maple flavoring
      3    cups pecans

Cook sugars, syrup, cream and salt over high heat until the mixture forms a soft ball (235 degrees) when dropped in water. Remove from heat.

Add maple flavoring and pecans. Beat or stir until creamy.

Drop from spoon onto waxed paper in bite size pieces.

Yield: 4 to 5 dozen.

Valentine's Day Kisses

      1 c  Butter
    1/2 c  Sugar
      1 ts Vanilla
      2 c  Flour
     14 oz Hershey's kisses
      1 x  Powdered sugar

Preheat oven to 375 degrees F.

Cream butter and sugar, beating well. Add vanilla and flour, and mix well.

Chill dough for one hour.

Pinch off a piece of dough. Roll into ball with palms of hands and then flatten.

Put Hershey's Kiss in center of dough and wrap dough completely around the Kiss.

Place onto ungreased cookie sheet one inch apart and bake for 10 to 15 minutes.

When cookie is cooled down, roll them in powdered sugar.
